Velez born to Pablo and Betty Velez on May 15, 1960. He found his way back home
to where it all began on May 27, 2016. A native of Newburgh NY, Paul was known
to many as chef Pauly. Paul was a graduate of NFA in 1978. After his graduation
he went on to become a chef and a graduate of the culinary institute of America
in 1980, he then obtained his master’s degree in teaching from New York
institute of technology in Long Island NY 2003. Paul was preceded by his mother
Betty Rodriguez and brother James (Jimbo) Velez. He leaves behind many nieces
and nephews including two that he help raised Auggie and Christina Rivera. He is
survived by his sister Betsy Velez Tolliver, her husband Michael Tolliver;
brothers Frank Matos, Peter Velez and his stepmother, Elsa Velez. Paul touched
many hearts with his kindness and sense of humor. He took great joy preparing
many delicious dishes for family and friends whom enjoyed his work and art as a
chef. Paul perfected his craft as a chef at many restaurants including the el
San Juan hotel in Puerto Rico, the monster at Fire Island NY, the Beau Rivaled
in Balmville, NY and the Ship Lantern Inn in Milton, NY. His final place of
employment was at the Mount Saint Mary College, located in Newburgh, NY. Paul
enjoyed gardening and decorating his home, especially at Christmas time. He put
the Wepa in Wepa he loved being a Puerto Rican. No doubt he will be missed by
